Tomato Jam (good on hot cakes)

for on hotcakes etc.
1 flat of overripe tomatoes. (If not overripe let set until so overripe that they are soft & mushy).
Skin & squeeze out seeds. Cut out spoiled spots on tomatoes “cut cross on tomato” & just squeeze by hand. (The less liquid the better as this must boil down later but anyway.
1 flat of overripe tomato (about 50 medium size tomatoes)
Pour in 5 lbs. sugar & add 6 lemons sliced very thin & quartered. Remove seeds.
Stir & cook on simmer all afternoon stirring everytime you walk by the stove (Smiles)
This long cooking evaporates the liquid. Add nothing else. Pour into hot jars, screw on lid & put jar upside down to insure sealing.
Yield: approx 3 qt.
