PÃNCAKES QUICK BREADS Griddle cakes... wheat cakes... pancakes.
One of the earliest forms of baking ... once called "hearth cakes." Dutch settlers brought pancakes to America. Whether hearty buckwheat cakes or delicate crepes, pancakes should be light, tender and uniformly golden brown. Today pancake houses featuring many varieties are gaining popularity across the nation.
HOW TO MAKE PANCAKES
1. Test griddle for right temperature.
2. Pour batter onto griddle.
3. When full of bubbles, turn pancakes.
4. Keep warm until serving time.
Favorite Pancakes
The good old-fashioned buttermilk kind.
1 egg
1 cup buttermilk
2 tbsp. vegetable oil or melted shortening
1 cup GOLD MEDAL Flour
1 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
Blend egg, milk and oil. Measure flour by dip-level-pour method or by sifting (see p. 6). Blend dry ingredients together. Add to liquids; beat with rotary beater until all flour is moistened. (Batter will be slightly lumpy.) Grease heated griddle, if necessary. To test, sprinkle with drops of water. When water sizzles, griddle heat is just right. Pour batter from pitcher or tip of large spoon in pools slightly apart for perfect round cakes). Turn pancakes as soon as they are puffed and full of bubbles, but before bubbles break. Turn, and brown on other side. Serve immediately with butter and syrup. If necessary, keep pancakes hot by placing between folds of warm towel in warm oven. (Don't stack them!) Makes 10 4" pancakes.
Sweet Milk Pancakes
Make Favorite Pancakes (above)—except: substitute sweet milk for buttermilk, add 2 tsp. more baking powder and omit soda. For extra lightness, beat egg yolk, add milk, etc. Fold in stiffly beaten egg white.
Blueberry Pancakes
See color picture page 85.
Make Favorite Pancakes (above)—except: add 1/2 cup drained fresh or frozen berries to batter, folding in carefully at the last.
Ferry Farm Sauce
As it was made by George Washington's mother.
Heat together slowly over hot water 1 cup strained honey and 1/2 cup maple syrup. Remove from heat and blend in 1 tsp. cinnamon.
ALL YOU HAVE TO DO
To make pancakes thick or thin as desired: add a little more liquid to thin; make thicker by adding a little more flour.
