Cinnamon Rolls
½ recipe plain roll dough
1 tbsp. soft butter
¼ c. sugar
1 tsp. cinnamon
Grease a 9- by 9-inch square pan.
Place the half recipe of dough (which has risen once) on a lightly floured board. Roll with a lightly floured rolling pin into an oblong about 6 inches by 12 inches.
Spread the flattened dough with butter. Mix the sugar and cinnamon, and sprinkle over the butter.
Roll up the dough like a jelly roll, and seal the edges by pinching the dough together. Cut the roll into 12 1-inch slices.
Place in the greased square pan, or in greased muffin cups. Cover with a kitchen towel and let rise in a warm place until double in bulk. Bake in a moderate oven (375°) about 25 minutes. Remove from pan and turn upside down to cool. Makes 12 cinnamon rolls.
Clover Leaf Rolls
½ recipe plain roll dough
Melted butter
Grease 12 muffin cups. On a lightly floured board, form the dough into a roll about 9 inches long. With a sharp knife, cut into 12 equal pieces. I do this by cutting the long roll in half. Then cut each of the 2 pieces in half again, making 4 chunks of dough. Cut each of these 4 pieces into 3 equal pieces, and you have 12 equal pieces of dough.
Form each piece of dough into 3 little balls. Place 3 little balls of dough in each muffin cup, and brush with melted butter for flavor.
Cover with a kitchen towel, and set in a warm place to rise until double in bulk. Bake in a hot oven (400°) for about 15 minutes. Remove from pans to cool. Makes 12 rolls.

Pre heat to 400° then turn oven down to 375° when you put buns into oven.
