EGG-MILK BEVERAGES Delicious ways with milk and eggs. Eggnog Simple, delicious egg-milk drink. 1 egg, well beaten 2 tbsp. sugar 1 cup chilled milk 1⁄4 tsp. vanilla Beat egg and sugar together. Beat in milk and vanilla. Serve cold in tall glass sprinkled lightly with nutmeg. Serve immediately. 1 serving. 1 1⁄2 tbsp. sherry flavoring and 1 tbsp. either brandy or rum flavoring may be substituted for vanilla. Hot Eggnog Nutritious hot drink. Warming in winter . . . ...wonderful for convalescents. See color picture p. 71. 4 eggs, separated 1⁄2 cup sugar 1⁄8 tsp. salt 3 cups milk 1 tsp. vanilla or 1 tbsp. rum flavoring In large saucepan blend egg yolks, 1⁄2 cup sugar and salt. Cook over medium heat, stirring constantly until heated through and bubbles form around edge. Add flavoring. Beat egg whites until frothy. Gradually beat in 3 tbsp. sugar, a little at a time. Beat until stiff and glossy. To serve, fill cups half full with meringue. Pour hot eggnog over meringue. Sprinkle with nutmeg, if desired. 12 servings. Spoon-up Eggnog Thick, rich, cold and fluffy. Eaten with a spoon, usually a holiday favorite with fruitcake. 4 eggs, separated 1⁄2 cup sugar 1⁄8 tsp. salt 1 to 2 tbsp. rum flavoring 2 cups whipping cream, whipped Beat egg yolks, sugar and salt until thick and lemon-colored. Stir in flavoring. Fold egg yolk mixture into whipped cream. Beat egg whites until stiff. Fold gently into egg-cream mixture. Chill eggnog thoroughly. Serve in punch cups with spoons. Sprinkle with grated nutmeg, if desired. 12 servings. For thinner eggnog, fold in 1 pt. milk just before serving. Flavored Milk Drinks Appealing to children . . . for quick refresher or with meals. For each serving; add one of the following syrups, fruits or flavorings to a tall glass. Fill glass with cold milk and stir thoroughly. Serve. Banana: 1⁄2 banana, mashed. Chocolate: 1 1⁄4 to 2 tbsp. Cocoa Syrup (p. 69) or use canned. Peanut Butter: 1 tbsp. peanut butter, 2 tbsp. sugar and dash of maple flavoring. Maple: 2 tbsp. maple syrup. Orange Blossom: 1⁄4 to 1⁄2 cup orange juice, 1 tsp. sugar, about 2 drops almond flavoring. Coffee: 1 1⁄2 to 2 tsp. powdered instant coffee and 2 tbsp. sugar dissolved in 2 tbsp. water. Berry: 2 tsp. strawberry or raspberry jam, or ice cream topping, or thawed frozen berries and 2 to 3 drops red food coloring. Caramel: 1 1⁄2 to 2 tbsp. Caramel Syrup (below). Caramel Syrup 1 cup brown sugar (packed) 1⁄4 cup hot water 1 tsp. vanilla 1⁄8 tsp. salt Gradually melt sugar in heavy pan over low heat, stirring constantly, until a smooth light brown syrup forms. Remove from heat, gradually stir in water. Return to heat; simmer until smooth, stirring constantly. Cool slightly. Add vanilla and salt. Makes 1 cup. Milk Shakes Add 1 scoop vanilla ice cream to any of the Flavored Milk Drinks (above); stir in well. 70
