SAUCES WHITE A good cook masters this basic sauce. White Sauce "The start of creamed dishes and many other sauces. 'White Sauce is a good beginning for the small cook,' says Virginia Hathaway, Child Psychologist with the Minneapolis Public Schools." 1. Melt butter over low heat in a heavy saucepan. Wooden spoon for stirring is a help. 2. Blend in flour, seasonings. Cook over low heat, stirring until mixture is smooth, bubbly. 3. Remove from heat. Stir in milk. Bring to boil, stirring constantly. Boil 1 min. Makes 1 cup. Thin Like coffee cream. For creamed vegetables, soup. 1 tbsp. butter ½ to 1 tbsp. flour ⅛ tsp. salt ⅛ tsp. pepper 1 cup milk Medium Like thick cream. For creamed and scalloped dishes. 2 tbsp. butter 2 tbsp. flour ½ tsp. salt ⅛ tsp. pepper 1 cup milk Thick Like batter. For croquettes, soufflés. ¼ cup butter ¼ cup flour ¼ tsp. salt ⅛ tsp. pepper 1 cup milk *Use smaller amount with starchy vegetables (peas, potatoes), greater with non-starchy (cream of tomato soup). Cheese Sauce For vegetable, rice, macaroni and egg dishes. To 1 cup Medium White Sauce (above) add ¼ tsp. dry mustard with the seasonings. Blend in ½ cup nippy Cheddar cheese (cut up or grated). Stir until cheese is melted. Rich Cheese Sauce To 2 cups Medium White Sauce (above) add 2 cups cut-up or grated nippy Cheddar cheese, 2 tbsp. dry mustard, 1 tsp. Worcestershire sauce and 1 tbsp. cooking sherry. Stir until cheese is melted. Mushroom Sauce Make 1 cup Medium White Sauce (above)—except sauté 1 cup sliced mushrooms and 1 tsp. grated onion in the butter 5 min. before adding flour. Egg Sauce "A pleasant addition to salmon and other fish." To 1 cup Medium White Sauce (above) carefully stir in 2 diced hard-cooked eggs. Season. Curry Sauce Combines perfectly with chicken, lamb or shrimp and rice. Make 1 cup Medium White Sauce (above)—except sauté ¼ tsp. curry powder in the butter before adding flour and other seasoning. Cucumber Sauce Refreshing with salmon and other fish. To 1 cup Medium White Sauce (above) add ½ cup cucumber, grated or thinly sliced, and a dash of cayenne pepper. Simmer 10 min. Dill Sauce An ideal mate for bland meat or fish. Make 1 cup Medium White Sauce (above)—except with the seasonings add 1 tsp. minced fresh dill or ½ tsp. dried dill and a dash of nutmeg. Simmer 2 or 3 min. FOR Christmas Eve white sauce Sauté one large onion in butter also add one pkg chicken bullion (one cube). For other veg dishes grated cheese can be added w/or w/o onion + chicken bullion.
