Italian Prune Leather

Wash & towel dry about 50 medium sized Italian prunes, do not peel! Remove seeds & quarter prunes. Put through blender on high speed. Measure 5 1/2 - 6 cups puree (raw). Add 1 cup sugar & blend till sugar is dissolved.
Line two 16" x 10" x 1/2" cookie sheets with saran wrap & pour the puree into them. (3 cups in each cookie sheet & no more) Spread out evenly.
Set racks about 5" apart in sorta center of the oven, so air space is below & above each cookie sheet.
Set oven on 150° or lowest heat. (When the oven light turns on is usually warm enough by the time it clicks off anyway.)
