Caramel Corn
8 qt. popped popcorn in large roasting pan
In 2 1/2 qt. saucepan, combine:
2 c. light brown sugar, firmly packed
1/2 c. light corn syrup
1 c. (1/4 lb) margarine or butter
1/4 t. cream of tartar
1/4 t. salt
Bring to a boil over medium high heat,
stirring constantly, boiling rapidly
(about 5 min.) until 260° on candy thermometer
or hard ball stage. Remove from heat.
1 t. baking soda is to be stirred into
mixture stirring rapidly but thoroughly.
Pour quickly over popcorn! CAREFUL! HOT!
Bake 150° (In Oven)

Soda Cracker Candy

Use a foil lined cookie sheet 11" x 17"
Spray foil with Pam. Line with soda crackers.
2 c. firmly packed brown sugar
and 1 cup butter (no substitute)
Boil together about 3 minutes + spread over
crackers. Put in oven 350° 5 minutes
(Do not substitute butter with oleo)
Remove from oven + spread 2 cups
of melted milk chocolate chips over
crackers while they cool down.
Sprinkle finely chopped nuts over chips.
Cool + cut into squares.
