My Original Pumpkin Pie Recipe
From fresh pressure cooked pumpkin
Two Pies: (line pie plates with one uncooked crust)
Preheat 400°
2 c. sugar
3/4 t. salt
2 1/2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
scant 1/2 t. cloves
3 cups mashed pumpkin
6 of Echo's chicken eggs: Extra Large
One recipe of unsweetened milk (over)
use approx. 1 1/2 little for extra pies: (1/2 can be Eagle Brand sweetened condensed milk)
Hand mix together
Mixer mix
400° for 10 min
45 min at 350 until inserted knife comes out clean

Rhubarb—Pineapple Pie

3 cups rhubarb cut in small pieces
1 large can pineapple chunks (drained)
1 3/4 cups sugar
1/3 cup flour
Use potato masher & sorta break up the canned pineapple chunks.
Mix the four ingred. together & let set—while you make 1 crust.
Dot with butter & put on top crust.
Bake 400°—15 minutes turn down & bake 350°—45 minutes longer
No eggs!!
