Mom’s Coconut Oatmeal Cookies

Cream together:
1 cup sugar & 1 cup brown sugar
1/2 cup margarine & 1/2 cup crisco
Add 2 eggs - beat well
Add: 1 cup coconut
2 cups oatmeal & 1 tsp. vanilla
Sift together:
2 cups flour; 1 teaspoon baking powder & 1/2 teaspoon salt
Add to above mixture & mix well.
Roll into teaspoon size balls, dip in sugar and flatten slightly with glass dipped in sugar.
Bake in 350° oven for 10-12 minutes.
Ginger Snap Cookies (Roe/Rined)
(Wedding Favorite)
Cream: 1 cup sugar & 3/4 cup shortening
Beat in 2 eggs & 2 tablespoons molasses
(use light molasses)
Sift tog: 2 1/2 cups flour
2 tsp. soda
1 tsp. cinnamon
1/2 tsp. ginger
1 pinch salt
Chill several hours & bake 10 min. at 325° oven. (5 to 8 1/2 mins)
