My Rhubarb + Strawberry Pie 3 cups rhubarb cut up 1 1/2 cup sliced strawberries 1 1/2 cup sugar 1/3 cup flour Dot with 1 1/2 Tablesp. flo butter Mix ingredients + place in (unbaked pie) crust lined pan & top with top crust w/slits. Good w/whip cream or ice cream. Preheat oven 375° 9" pie pan Coconut Custard Pie To Rita Mama (Eleanor Forsberg) Daddy loves this one. 5 eggs, well beaten 2/3 cup sugar 1/4 teaspoon salt 2 1/2 cups milk (use 2 canned milk) 1 teaspoon vanilla 5 cup coconut (if desired) sprinkle top of pie with nutmeg before putting into the oven Combine beaten eggs, sugar + salt. Beat well. Add milk, vanilla and coconut, + mix. Pour into unbaked pie shell. Sprinkle with nutmeg - (No top crust) Bake 425° for 40-45 minutes or until a knife inserted into pie comes out clean.
