Cream Filling
So smooth and rich.
¼ cup sugar
1 tbsp. cornstarch
¼ tsp. salt
1 cup milk
1 egg yolk, slightly beaten
1 tbsp. butter
1 tsp. vanilla
Mix sugar, cornstarch and salt in saucepan. Gradually stir in milk. Bring to boil over medium heat, stirring constantly. Boil 1 min. Remove from heat. Stir at least half of hot mixture into egg yolk. Blend into remaining mixture. Boil 1 min. more. Remove from heat. Blend in butter and vanilla. Cool, stirring occasionally.
Almond Cream Filling
Make Cream Filling (above)—except use only ½ tsp. vanilla and add ¼ tsp. almond flavoring. Cool. Add ½ cup toasted slivered blanched almonds.
Chocolate Cream Filling
Make Cream Filling (above)—except increase sugar to ½ cup and add 1 sq. unsweetened chocolate (1 oz.), cut up, to mixed dry ingredients (¼ cup cocoa may be used in place of chocolate).
Egyptian Filling
Custard type... enhanced with dates and almonds.
⅓ cup cream (20% butterfat)
⅔ cup sugar
2 egg yolks
½ cup chopped dates
½ tsp. vanilla
½ cup chopped almonds, toasted
Mix first four ingredients. Cook over low heat until slightly thickened, stirring constantly (6 or 7 min.); remove from heat; add vanilla and nuts. Cool until thick enough to spread. Enough to fill and cover top of two 8 or 9" layers.

Clear Lemon Filling
Wonderfully tart and delicious.
¾ cup sugar
3 tbsp. cornstarch
¼ tsp. salt
¾ cup water
1 tbsp. butter
2 tbsp. grated lemon rind
⅓ cup lemon juice
Mix sugar, cornstarch and salt in saucepan. Gradually stir in water. Bring to boil over direct heat, stirring constantly. Boil 1 min. Remove from heat. Stir in butter and rind. Gradually add lemon juice. Cool thoroughly.
Rich Lemon Filling
Use the leftover egg whites in frosting.
Make Clear Lemon Filling (above)—except, after mixture has boiled 1 min., stir half of hot mixture into 2 egg yolks, slightly beaten. Blend into remaining mixture. Boil 1 min. more. Remove from heat and add the butter, lemon rind and juice.
Clear Orange Filling
Refreshing. Full orange flavor.
1 cup sugar
¼ cup cornstarch
⅛ tsp. salt
1 cup orange juice (reconstituted frozen orange juice may be used)
2 tbsp. butter
2 tbsp. grated orange rind
2 tbsp. lemon juice

Pineapple Filling
⅓ cup sugar
3 tbsp. cornstarch
¼ tsp. salt
¾ cup pineapple juice
about 1 cup crushed pineapple, well drained
1 tbsp. butter
1 tsp. lemon juice
