WHOLE EGG CAKES
Always popular... made with 1, 2 or 3 eggs.
DOUBLE-QUICK METHOD
New Starlight Cake 8/68
Perfect with Chocolate Cream Filling (p. 177) and Allegretti Frosting (p. 174).
2 cups plus 2 tbsp. GOLD MEDAL Flour
1½ cups sugar
3½ tsp. baking powder
1 tsp. salt
½ cup soft shortening
1 cup milk
1 tsp. flavoring
3 eggs (½ to ⅔ cup)
Heat oven to 350°. (mod.). Grease and flour two layer pans, 8 or 9x1½" or an oblong pan, 13x9x2”. Measure flour by dip-level-pour method or by sifting (see p. 6). Blend flour, sugar, baking powder and salt. Add shortening, milk and flavoring. Beat 2 min., medium speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl constantly. Add eggs. Beat 2 more min., scraping bowl frequently. Pour into pan(s). Bake 8" layers 35 to 40 min., 9" layers 30 to 35 min., oblong 45 to 50 min. Cool.
Butterscotch Sundae Cake
2¼ cups GOLD MEDAL Flour
3 tsp. baking powder
1 tsp. salt
¾ cup brown sugar (packed)
½ cup soft shortening
1 cup milk
1 tsp. vanilla
2 large eggs (½ cup)
Mix and bake as for New Starlight Cake (above)—except add brown sugar with flour and shortening. Frost with a cooked white icing. Decorate with Butterscotch Glaze (below).
Butterscotch Glaze
¼ cup brown sugar (packed)
3 tbsp. butter
2 tbsp. water
Mix ingredients in saucepan. Bring to full rolling boil, stirring constantly. Then boil vigorously without stirring 1½ min. Remove from heat and immediately dribble with a teaspoon around top edge of cake. Glaze will run over sides in uneven lines. Or make a small groove around edge of cake after it has been frosted, using back of teaspoon. Dribble glaze in the groove and over the edge. This makes it look more like a Butterscotch Sundae.
Starlight Coconut Cake
Follow recipe for New Starlight Cake (above)—except add ¼ tsp. almond flavoring and 1 cup shredded coconut, finely cut, to batter. Ice with Orange Butter Icing (p. 172).
Dinette Cake
A small 1-egg cake that keeps and carries well. "This is just the right size for my sister and me," says Olga Siege of our staff.
1½ cups SOFTASILK Flour
1 cup sugar
2 tsp. baking powder
½ tsp. salt
¼ cup soft shortening
½ cup milk
1 tsp. flavoring
1 egg (¼ to ⅓ cup)
Mix as for New Starlight Cake (above). Pour batter into greased and floured square pan, 9x9x1¾”. Bake 30 to 35 min. Cool. Frost as desired.
Pie 'n Cake Desserts
Grease and flour 8 and 9” pie pans. Make batter for Dinette Cake (above) and pour into prepared pans. Bake 8” cake 25 to 30 min., 9” cake 20 to 25 min. Immediately spread 1-lb. can prepared cherry pie filling over 9” pan. Place squares of chocolate from three 7¾-oz. milk chocolate bars over top of 8” pan and spread as they melt to form frosting. Serve cherry dessert warm in wedges; serve chocolate-topped cake later.
