EGG YOLK CAKES Each piece a golden nugget. New Gold Cake Tender...and rich yellow. 2 cups SOFTASILK Flour or 1¾ cups GOLD MEDAL Flour 1⅓ cups sugar 3 tsp. baking powder 1 tsp. salt ½ cup soft shortening 1 cup milk ½ tsp. lemon flavoring ½ tsp. vanilla 4 egg yolks (⅔ cup), unbeaten Heat oven to 350° (mod.). Grease and flour two layer pans, 8x1½" or an oblong pan, 13x9½x2". Measure flour by dip-level-pour method or by sifting (see p. 6). Blend flour, sugar, baking powder and salt. Add shortening, ⅔ cup milk and flavorings. (When using GOLD MEDAL Flour, add all milk at once.) Beat 2 min., medium speed on mixer or 300 vigorous strokes by hand. Scrape sides and bottom of bowl constantly. Add rest of milk and egg yolks. Beat 2 more min., scraping bowl frequently. Pour into pan(s). Bake layers 30 to 35 min., oblong 35 to 40 min. Cool. Especially delicious with a fruity icing, such as Strawberry Butter Icing (p. 172) or Lemon or Orange Butter Icing (p. 172). Lord Baltimore Cake Named for George Calvert, Lord Baltimore, the English statesman who founded the state of Maryland. Bake New Gold Cake (above) in layers. Spread cooled layers with Fruit-Nut Filling (below). Cover with thin layer of Pink Frosting (below). Put layers together. Cover top and sides with Pink Frosting. Lord Baltimore Pink Frosting Make Lady Baltimore White Icing (p. 133)—except use only ⅓ cup water and add 1⅓ cup maraschino cherry juice. In place of vanilla, use ½ tsp. lemon flavoring and 1 tsp. grated orange rind. Lord Baltimore Fruit-Nut Filling Mix ¼ cup each toasted dried macaroon crumbs, toasted cut-up pecans, toasted cut-up blanched almonds and chopped maraschino cherries into ⅓ of Pink Frosting (above). Hawaiian Pineapple Cake Gold and white beauty. Use 2 yolks and 1 whole egg in the cake and save the other 2 whites for the icing. Bake New Gold Cake (above) in layers—except use 2 egg yolks and 1 whole egg in place of 4 egg yolks. Put cooled layers together with Pineapple Filling (p. 177)... spreading about ½ cup over center of top layer. Frost sides and a 1½" border on top with a fluffy white icing.
