Mom's Coconut Oatmeal Cookies Grandma Liz Sieverding Cream together: 1 cup sugar + 1 cup brown sugar 1 cup margarine + ½ cup Crisco 2 eggs - beat well Add 1 cup coconut 2 cups oatmeal + 1 tsp vanilla Sift together: 2 cups flour, 1 teaspoon baking powder + ¼ teaspoon salt Add to above mixture & mix well. Roll into teaspoon size balls. Dip in sugars and flatten slightly with glass. Bake in 350° oven for 10-12 minutes. Ginger Snap Cookies (Doris Blair) (Hadding favorite) Cream 1 cup sugar + ¾ cup shortening Beat in 2 eggs + 6 tablespoons molasses (use light molasses) Sift tog - 2¾ cups flour 2 tsp soda 1 tsp. cinnamon ½ tsp. ginger a pinch salt Chill several hours & bake 10 min at 325° (oven) (5 to 8 min)
