"Pinwheel Date Cookies" 1 cup white sugar 1 cup brown sugar (packed) 1 cup butter (do not substitute) 3 eggs 4 cups flour 1 teaspoon soda + 1 teaspoon vanilla Cream butter, add sugars & beaten eggs. Beat well. Sift soda & flour. Add to the first mixture. Divide chilled dough into 3 balls. Roll ¼" thick & spread each with the following filling, then roll up like a cinnamon roll. (See filling on back side) Filling for Pinwheel Date Cookies ½ cup sugar ½ cup water 1 Tablespoon flour 1 cup pitted, ground dates Cook filling for 5 min. or till sugar is dissolved and cool slightly before spreading on the cookie dough. Spread filling on dough & roll up like a cinnamon roll. Put in wax paper to set up before cutting & baking (in recipe). Let set overnight in the refrig. for easy cutting. May be frozen in wax paper & then bake as needed. Cut & put on greased cookie sheet. Bake 12 minutes in 400° oven.
