NACHO DIP - MEAL Corn tortilla chips 1½ c. fried hamburger 1 can refried beans ½ c. prepared guacamole ½ c. sour cream 1 c. grated Cheddar cheese 1 chopped tomato ½ c. chopped olives 3 Tbsp. chopped green onions Serve chips in a bowl. Layer other ingredients in a cake pan; heat in a microwave on MEDIUM until cheese melts. Echo Love MEATLOAF Meatloaf: 1½ lb. hamburger ¾ c. quick rolled oats ¼ c. onion, chopped 1 egg, beaten 1½ tsp. salt ¼ tsp. pepper ¾ c. milk 1 c. pizza sauce Sauce: ⅓ c. catsup 1 Tbsp. mustard 2 Tbsp. brown sugar Mix first list of ingredients well; pack firmly in a baking dish. Mix sauce and pour over meatloaf. Bake at 350° for 1¼ hours. Betty Lozeau CHIMICHANGAS 1 lb. ground beef 1 medium onion, minced ½ green pepper, chopped 1 clove garlic, minced Oil ⅓ c. red chili sauce ½ tsp. salt 1 c. refried beans 1 c. Monterey Jack, shredded 8 (8 inch) flour tortillas Guacamole Sour cream Green chili sauce Brown beef with onion, pepper, and garlic in 1 or 2 tablespoons of hot oil. Drain; stir in chili sauce and salt. Reduce heat; simmer 1 minute. Stir in beans and cheese. Heat tortillas until soft. Place about ¼ cup filling in center of tortilla. Fold in ends; roll as burrito. Fry in ¾ inch of hot oil for about 1 minute, turning as needed. Drain on paper towel. Serve hot, topped with guacamole, sour cream, and chili sauce.
